How to select the functionality of RF7 pin on PIC18F8723 (i.e., I/O or SPI)?

This information is not inside the PIC18F8723 datasheet as this is a feature that the family shares. You can find the necessary information in the PIC18F8722 Family Datasheet which can be found on the PIC18F8723 landing page under Documents > Datasheets.

A note in the PIC18F8723 datasheet reads as follows: "This data sheet documents only the devices' features and specifications that are in addition to the features and specifications of the PIC18F8722 family devices. For information on the features and specifications shared by the PIC18F8723 family and PIC18F8722 family devices, see the 'PIC18F8722 Family Data Sheet (DS39646)'."

The "Enabling SPI I/O" section of the "PIC18F8722 Family Data Sheet" has some information regarding this. The SSPxCON register needs to be configured to choose the SPI mode.
